The PID control is a game-changer as it guarantees precise thermal stability, ensuring your coffee is always brewed at the perfect temperature. But that’s not all! You can also control this machine using the Odyssey Espresso application. This handy app allows you to keep an eye on:

- the volume of water (to know the ratio),

- The first configuration gives very gentle control over the lever, as there is a spring to help the user extract the espresso. As the spring is calibrated, it helps the barista to find a certain regularity in his extractions.
- The second configuration consists of removing the spring to obtain a completely manual machine, without assistance, like the La Pavoni machines mentioned earlier. The procedure for removing the spring is not complicated, and a video showing the operation is available on the manufacturer’s website.

I must admit, I haven’t had the chance to see this feature in action yet, so I can’t comment on its power. However, I would venture to guess that it’s likely on par with the steam function of a La Pavoni lever machine, given that its steam nozzle is directly connected to the boiler.
